Happy July 4th Weekend!

In honor of one of our favorite pastimes for this holiday – EATING, I thought I’d share one of my personal holiday staples: Pimento Cheese.

Now, I KNOW, some recipes are SACRED, but this one is new to me & my family, and this has been the go-to recipe I’ve used for the last few years, with a lil’ addition that I’ll note below the article. SOOO, if you’re looking for something else to try for the picnic, or to stuff your face with on the couch 😁, give it a shot.

It’s great with crackers, on bread, as a spread on your burger, and my personal fave, stuffed into hot or sweet peppers and baked/grilled!

* i personally like to add a few drops of Frank’s Red Hot or hot sauce of your choice.
this recipe is also super easy to double for a big crowd, or half  if you know you’re gonna eat the whole thing all by yourself and have no self control but don’t want to be a piglet (not that i know this from personal experience 😇)

Ingredients

    • 2 cups shredded cheddar cheese
    • 8 ounces cream cheese, softened
    • 1/2 cup mayonnaise
    • 1/2 teaspoon garlic powder
    • 1/4 teaspoon paprika
    • 1/2 teaspoon onion powder
    • 4 ounces diced pimentos, drained
    • 1/2 teaspoon dried mustard

Instructions

  1. With an electric mixer, mix the cheddar cheese and cream cheese together. Mix for 2-3 minutes.

  2. Add in the mayo and mix.

  3. Add in the garlic powder, paprika, onion powder and dry mustard. Stir everything together.

  4. Mix in the pimentos.

  5. Refrigerate for at least 10-15 minutes before serving.
